Ingredients
1 cup (150g) self-raising flour
90g softened butter
1 teaspoon vanilla extract
1/2 cup (110g) caster sugar
2 eggs
2 tablespoons milk
1. Preheat oven to 160/180 degrees. Line your cupcake pan with 8 liners.
2. Sift flour into a small bowl. Add the butter, vanilla, sugar, eggs and milk. Using an electric beater, mix the ingredients on low speed until all the ingredients are combined. Increase the speed until the mixture is a paler colour
3. Fill your cupcake liners (3/4 full) with the mixture. Bake for around 20 minutes.
4. Once cooked, let them sit for 5 minutes to cool
If you like, you can make a bigger batch and freeze your extra cupcakes, in glad wrap bags. You will need to take them out of the freezer and out of the glad wrap bags to thaw at least 1.5 hours prior to class start time.
